About kitchen utensils

Kitchen utensils are the hand tools used every day for prep and cooking. Knives include chef's knives, santoku, paring, bread, utility and boning knives in carbon or stainless steel. Cutting boards come in end-grain and edge-grain wood, bamboo and plastic. Cooking tools include wooden spoons and spatulas, silicone spatulas, whisks, tongs, ladles, slotted spoons, peelers, graters, mandolines, sieves and measuring cups and spoons.

For knives, consider blade steel, edge angle, handle shape and how you will sharpen it; carbon steel takes a keen edge but can rust and discolor. For wood, hardwoods with tight grain last longer and should be oiled. For gadgets, check what they actually replace in your kitchen.

Independent bladesmiths and woodturners on MultiVendor Market make tools by hand, and many will tell you exactly how a piece was made and how to keep it in good shape.

Choosing kitchen knives and utensils

  • For knives, check blade length, steel type, handle and whether it is single- or double-bevel.
  • Carbon steel knives need drying straight after use to prevent rust.
  • Choose wooden boards and spoons in tight-grained hardwood and oil them regularly.
  • Avoid putting wooden tools and good knives in the dishwasher.
  • Check sizes of boards and tools to fit your counter and storage.
  • Knife shipping and sale may have age and destination rules; check local rules.

Questions about kitchen utensils

Carbon or stainless steel knife?

Carbon steel can be very sharp and easy to hone, but needs care to avoid rust. Stainless is lower maintenance. Ask the maker about the steel they use.

How do I care for a wooden cutting board?

Hand wash, dry upright and oil it regularly with a food-safe oil. Ask the seller which finish they used.

Can I get a custom knife?

Some bladesmiths take commissions. Message them about blade shape, steel, handle and timeline.
