About bakeware

Bakeware is the equipment that goes in the oven for cakes, breads, pastries and roasts. It includes round, square and springform cake pans, loaf pans, muffin and cupcake tins, sheet pans and cookie sheets, pie and tart dishes with removable bases, ceramic and glass bakers, cast iron bread pans and silicone molds. Bread bakers also look for proofing baskets, bench scrapers, lames and cloches.

Material affects results. Light-colored aluminum bakes evenly, dark pans brown faster, glass and ceramic heat slowly but hold heat, and silicone releases easily but browns less. Size matters too: recipes are written for specific pan dimensions, so check them before you buy.

Independent shops often carry specialty items, from handmade ceramic pie dishes to rattan proofing baskets and decorative molds.

Choosing bakeware

  • Match pan dimensions to the recipes you bake most often.
  • Choose material based on results: light metal for even baking, dark metal for browning, ceramic for gentle heat.
  • Check maximum oven temperature, especially for silicone and coated pans.
  • Look for removable bases or springform sides for cheesecakes and tarts.
  • Make sure sheet pans and trays fit inside your oven.
  • Read care instructions; some bakeware is not dishwasher safe.

Questions about bakeware

Can I substitute a different pan size?

Often you can, but baking time and depth will change. Pan volume is the key; compare dimensions and adjust as you go.

How do I care for a bread proofing basket?

Dust it with flour before use, let it dry fully afterwards and brush out excess flour. Avoid soaking it in water.

Is silicone bakeware safe in the oven?

It is designed for oven use up to a stated temperature. Check the listing and follow the maker's guidance.
