About tea

True teas all come from the tea plant and differ in how the leaves are processed: green and white teas are minimally oxidized, oolongs are partly oxidized, black teas fully oxidized, and pu-erh is aged or fermented. Matcha is powdered green tea whisked into water. Herbal infusions such as chamomile, rooibos and peppermint are made from other plants.

Independent tea merchants often source directly from gardens and list origin, harvest season and brewing instructions. Blenders create flavored teas and tisanes with fruit, flowers and spices.

Brewing matters as much as the leaf. Water temperature, steeping time and leaf quantity change the flavor, and many loose-leaf teas can be steeped more than once.

Choosing tea

  • Check origin, harvest season and processing for single-origin teas.
  • Read the full ingredient list for blends, including flavorings and possible allergens.
  • Follow the seller's brewing guidance on water temperature and steeping time.
  • Herbal teas can interact with some medications or conditions; ask a professional if you have concerns.
  • Store tea airtight, away from light, heat and strong smells.

Questions about tea

What's the difference between loose-leaf and bagged tea?

Loose-leaf tea usually uses whole or larger leaves that have room to expand, giving fuller flavor. Bagged tea is more convenient.

Does herbal tea contain caffeine?

Most herbal infusions are naturally caffeine-free, but blends may include true tea or other caffeinated ingredients. Check the ingredient list.

How should I store loose-leaf tea?

In an airtight container away from light, heat, moisture and strong odors.
