About cooking

Cooking courses range from absolute basics to specialist techniques. Beginner courses usually start with kitchen setup, knife safety and basic cuts such as dice, julienne and chiffonade, then move through core methods: sauteing, roasting, braising, boiling and steaming, pan sauces, cooking grains and eggs, and seasoning with salt, acid and heat. By the end you should be able to cook a set of reliable everyday meals without a recipe.

Cuisine-focused courses go deeper into one tradition, such as Italian pasta and sauces, Mexican salsas and tortillas, Indian spice blends and curries, Japanese home cooking or Middle Eastern mezze. Other courses are organized around a goal: weeknight meal prep, cooking on a budget, plant-based meals, cooking for one, or feeding a family. More advanced courses cover stocks and mother sauces, butchery basics, fermentation and plating.

Kitchen work involves sharp knives, heat and food safety. Look for courses that teach safe knife handling, safe cooking temperatures and how to store leftovers, and adapt recipes carefully if you or the people you cook for have food allergies.

Choosing an online cooking course

  • Decide whether you want general technique, one cuisine, or a goal like meal prep or budget cooking.
  • Check the equipment list; most beginner courses need a chef's knife, cutting board, a skillet and a pot.
  • Look for technique explanations, not just recipes, so you can cook without instructions later.
  • Make sure ingredients are available where you live, or that substitutions are suggested.
  • Check that allergens are noted and that the course covers food safety basics.

Questions about cooking

I can barely cook. Where should I start?

Look for a beginner course that covers knife skills, basic heat methods and a handful of everyday dishes. Courses that explain why each step matters help you improvise later.

Do cooking courses include recipes I can print?

Many do, as downloadable recipe cards or workbooks. Check the course description for what is included.

Can I adapt recipes for allergies or diets?

Often yes, and many instructors suggest substitutions. For serious allergies, check every ingredient yourself and message the instructor if unsure.
